I can count the number of beers I’ve had on my 2 hands. I’m not a big drinker, and I'm definitely not a fan of beer ... or wasn't anyway.
There is a local burger restaurant near me that serves an appetizer that is seriously out of this world. It's deep-fried soft pretzels, served with a warm beer cheese dip. There are some other dipping sauces that come with it as well, but none of them matter after you taste the beer cheese!
It wasn't until I tasted this appetizer a couple of years ago, that I actually began to appreciate the flavor of the beer. It gives so much richness and body when it's added to the right recipe.
To come up with this beer cheese dip, I first started looking into low carb beer options. I was actually surprised to see that there are several, widely available varieties. The 2 with the best macros were Budweiser Select 55, and Michelob Ultra. They both come in at under 2 net carbs per bottle! I kept the seasoning super light for this dip because I really wanted to beer to shine. I do like to add a little bit of cayenne for the tiniest bit of heat - but you could leave that out if heat isn't your thing.
You can serve beer cheese dip just about any way that you would serve a traditional cheddar based dip. But do yourself a favor and make this with a batch of low carb pretzel bites!
The combo is a match made in heaven and you will thank yourself for taking the extra step.
How to store leftovers
This cheese will keep in a tightly sealed container in the refrigerator for up to 5 days. It will become solid as it is chilled. To reheat, simply place the desired amount in a microwave-safe bowl and heat in 30-second intervals, stirring after each interval until it reaches the desired temperature.
If you do not have a microwave, you can reheat it on the stovetop over low heat, stirring frequently.

Beer Cheese Dip
Ingredients
- 2 tbsp Butter
- 1 cup Low Carb Beer I used Budweiser select 55
- 2 teaspoon Mustard I like to use dijon!
- ½ teaspoon Paprika plus additional for garnish
- ⅛ teaspoon Ground Cayenne Pepper or to taste
- ¼ cup Heavy Whipping Cream
- 2 oz Cream Cheese
- 2 cups Cheddar Cheese shredded
Instructions
- Combine the butter, beer, mustard, ½ teaspoon of paprika, and cayenne pepper in a medium sauce pan. Bring to a boil and then reduce to a simmer.
- Allow the mixture to simmer for 10 minutes, stirring occasionally.
- Stir in cream cheese, and heavy cream and shredded cheese. Stir until well combined.
- Return to stove over low heat and simmer for another 5 minutes stirring frequently.
- Transfer to a serving dish and top with additional paprika if desired.
